Happy New Years!

I am not one who usually likes new year's resolutions because I fell like whatever happens, happens... however I am now 25 as you may have read in one of my previous post and I should be making some goals and sticking with them and why not do it this coming up year in 2010?!?

Good News! I'm a Sinner

We started a new series at church this morning called ''Are You Open''.
It made me think about where my heart is
Could it be
Angry at what someone else has done.
Guilty because of my own flawed contributions.
Discourage over the whole situation
You choose....

1 Timothy 1:12-16 says
I thank Christ Jesus our Lord, who has given me strength, that he considered me faithful, appointing me to his service. Even though I was once a blasphemer and a persecutor and a violent man, I was shown mercy because I acted in ignorance and unbelief. The grace of our Lord was poured out on me abundantly, along with the faith and love that are in Christ Jesus.
Here is a trustworthy saying that deserves full acceptance: Christ Jesus came into the world to save sinners—of whom I am the worst. But for that very reason I was shown mercy so that in me, the worst of sinners, Christ Jesus might display his unlimited patience as an example for those who would believe on him and receive eternal life.

So in hindsight ''I am a sinner not a victim!''

Hank update

Hank was born last night (7 lbs 10 oz) by c-section after Samantha was in labor for 15 hours.
They took Hank up to the NICU for evaluation and to clear his lungs of muconium.
After a while of watching him, his breathing wasn’t getting any better so they did some further tests to see if they could find anything causing the breathing difficulties and they found that he has a heart condition called Transposition Of The Great Arteries.
Without any hesitation they transported Hank to Children’s Memorial Herman Hospital downtown.
They will perform a small surgery to keep him stabilized until he is a five days old and then perform the big surgery to correct the heart condition.
Please Pray for strength, courage and overwhelming peace for Samantha, Derric and their families and Pray for Hank and the doctors that will be making him all better.

Substitution

With the holidays fastley approaching I wanted to post a few of my secret substitutes that really cut out calories when I cook or bake.

Whole milk- Skim, 1% or 2% milk
Whipped cream- Chilled, whipped evaporated skim milk or nondairy whipped topping
Sour cream- Plain low-fat yogurt, or 1/2 cup cottage cheese blended with 1½ tsp. lemon juice, or low- or nonfat sour cream
Evaporated milk- Evaporated skim milk; low- or nonfat mayonnaise; or plain low-fat yogurt combined with low-fat cottage cheese
Whole egg- Two egg whites, or 1/2 cup egg product
Full-fat cheese- Low-fat, skim-milk or fat-free cheese
Ricotta cheese- Low-fat or nonfat cottage cheese (puree in a food processor or blender before using), or low-fat or nonfat ricotta cheese
Bacon- Turkey bacon, Canadian bacon, smoked turkey or prosciutto
White pasta- Whole wheat pasta
White rice-Brown rice
Butter or oil (baking)- Applesauce (substitute only half the amount of butter or oil called for with applesauce
White flour (baking) -Whole wheat flour
Cream cheese- Neufchatel-style cream cheese
White wine or beer- An equal amount of apple juice
Red wine- An equal amount of cranberry juice with a touch of red wine vinegar

I was looking trough Cookie magazine and I ran across this recipe. Not the turkey one!
The only thing that I altered from this recipe is I used cinnamon instead brown sugar, I can't believe it's not butter instead of butter and I would cover the pan with foil or spay it a few times with cooking spay so the fruit dose not stick

Our friends Lisa and Scott invited us to the Follow You concert and I don't know if it was the cool weather or the fellowship and worship time that we had with our sweet friends but I felt such a strong presence of GOD... I cant even put it into words right now...

I woke up thinking that I would somehow fell different turning 25... but instead I had a mini quarter life crisis thinking ''ohh no I am only five years away from being thirty and half way to fifty''!!! I know it sounds crazy but if you know me I always over analyze everything!!
Even with my mini crisis Logan made sure I had the best birthday ever.. we kind of celebrated all week long with family and friends!!

Taste like SwEEt SUmmer 09

Can I just tell you that these margarita cupcakes were a HIT at our picnic .. Seriously!!!
And just a little secret...
they were not hard to make!


INGREDIENTS
Cupcakes:1 box white cake mix8 oz margarita mix (liquid)2 oz tequila1 oz Grand Marnier3 egg whites2 Tbsp vegetable oil1 Tbsp grated lime zest
Lime Butter cream Icing:8 Tbsp butter, softened8 oz cream cheese, softened2 Tbsp lime juice (approx 2 fresh limes)1 Tbsp margarita mix1 tsp lime zest5 cups powdered (confectioners’) sugarcane sugar & fresh limes (for garnish)*****
DIRECTIONS
1. Preheat oven to 350º and prepare muffin pans.
2. Combine margarita mix, tequila, and Grand Marnier in a large glass and stir well.
3. In large bowl, combine cake mix, egg whites, lime zest, vegetable oil, and margarita mixture from step one. Stir ingredients together, then beat with an electric mixer on low to medium speed for approximately 2-3 minutes.
4. Spoon the batter into prepared muffin pans. Fill each cup/liner about 2/3 full.
5. Bake at recommended temperature on cake mix box (usually 325º – 350º) for 20 – 25 minutes or until toothpick inserted into the center of a cupcake comes out clean.
Icing:6. In a large bowl, combine butter, cream cheese, lime juice, margarita mix, and lime zest. Beat with an electric mixer until light and fluffy.
7. Add powdered sugar, one cup at a time, and continue beating until smooth. If icing is too thin, add more powdered sugar, a couple tablespoons at a time.
8. Spread icing generously on each cooled cupcake* or use a pastry bag to frost. Sprinkle cane sugar around the edges of the cupcake for a “salt rimmed” look and garnish with lime wheels & wedges.

*Make sure to remove cupcakes from pan and cool completely before frosting.

Tip: Leftover frosting makes a great dip for fruit or bagle spread!

Spring and Summer 09 has been crazy busy with work, weddings, babies, Remmy and not having internet for almost two months has not been helpful either! I have had nowhere to record all of my events such as my sweet nephew is Six months old as of the 28th of May and already has in two bottom teeth with two more on the way... he is also in the process of trying to crawl !!

Surprise and Happy Birthday Derric!

Last week I blogged that I was Ohhh soo Happy and one of the reasons was because we found out our sweet friends The Harughty's found out they are expecting!!!
Samantha has been saying for weeks now that she has been tired and having leg cramps not to mention baby dreams so on Derric's birthday they went to the doctor to see what was going on and Surprise and Happy Birthday to Derric they are seven weeks pregnant!!!
I cant wait to help decorate!!

Happy Monday

We started the day off with Brayden's FOUR MONTH check up...I can not belive our sweet pumkin pie is two months away from six months and then after that just six more months away from a Year!!! I know I over think everything! He is a healthy little growing boy weighing in at 18.3 pounds and ''24''inches long!! Very healthy and happy boy!
Earlier that day we went to this amazing park with all sorts of amenities including a bluebonnet patch.I got a few great shots of my sister(ok who looks great after having a baby 4months ago!!) and the baby before it rained. Here are just a few of my favorites aside from Logan and I not looking so great.

If there's one thing that gets in the way of you being your healthiest, it's stress. For anyone who's found themselves standing in front of the freezer inhaling spoonfuls of Coffee Heath Bar Crunch ice cream to avoid finishing a project, or waking up three times in the wee hours of the night in anticipation of a difficult conversation, here's some not-so-shocking news: Research shows that anxiety can make you sleep less, get sick more often, remember less, become more prone to long term diseases and—as if you needed reminding— eat more or less(me).
In a recent Self.com poll, 85 percent of women said that worries interfere with their ability to catch sleep, while 71 percent say they're more irritable due to stress. And given the recent headlines about the state of our economy, it's not surprising that 52 percent of women say they are under considerably more stress than they were six months ago.

Check a few of these tips out to relieve and prevent stress so it will not take over you're LIFE!

-Turn up the tunes. Listening to music that has a steady (not frenetic) beat may cause brain waves to keep time and relax you. Load your iPod with a play list of the songs that make you happiest.
-Call a friend. Pouring your heart out to pals can help you cope with bad feelings and brainstorm new ways to solve problems. And don't forget to return the favor...lending an ear and offering support can make you feel needed and reduce anxiety.
-Break a sweat. Exercising for 30 minutes makes your body release chemicals that dull the physiological effects of stress response for up to a full day. But the effect only works when the activity is something you really want to do, so make sure you're psyched about channeling your energy in that cardio direction.
-Pamper yourself. Whether you get a pedicure or splurge on a blowout, giving yourself special treatment reduces your blood pressure and gets your mind off what’s bothering you.
-Light candles. The dim setting actually signals your brain to release melatonin, the good-for-you sleep hormone which ensures a better night's rest. And catching enough sleep helps keep your stress levels under control and your immune system humming.
-Snuggle with your sweetie. A simple 20-second kiss or hug increases endorphin levels.(love it:)
-Keep a journal. Jotting down your stressful thoughts can help you look at them more logically, potentially easing anxiety, mentally and physically.
Anticipate something awesome. Or something tiny that makes you smile. The point is to look forward to something each day, whether it’s enjoying your morning java or counting down to an exotic vacation. Practicing this will keep your mind from focusing on what could go wrong that day.
-Exhibit your exhilarating moments. Tape up pictures of three amazing days you’ve experienced, such as dancing at your wedding or crossing the finish line of a half-marathon. Honing in on the images for at least 10 seconds can lower muscle tension and stabilize your heartbeat.
-Give someone props. Pay a compliment to someone deserving. Research has shown that the more warm personal connections you make, the better your body is at jettisoning the effects of stress.... this one is my favorites too whenever I am in a bad mood for whatever reason I try to give a compliment to either a friend or a random stranger

Whenever I am stressed i tend to eat or not eat depending on what kind of stress related thig it may be or worse I close my self off and keep to my self so whenever I am in a bad mood I text my sister and tell her to send me a picture of my sweet precious nephew and it makes me fell so much better within seconds..

Cora Playground Benefit

This precious baby girl Cora went home to be with Jesus after battling cancer early last month.
I found her family on a friends blog and was inspired in so many ways but mainly by their Faith.

Double Trouble!

Friday night Logan and I were able to go out to Montgomery and spend some much needed fun times with The Harughty's! We started off at one of our favorite mexican restaurants 7 Leguas and apparently so did everyone else in Montgomery because the place was hoppin!
When we finally got our table around eight Sam and I knew that we couldn't stay long in order to make it to Hobby Lobby and Michael's before they closed ....so without even thinking we took off in Logan's truck with Derrics keys in tow and left our boys stranted. Once they relaized that we weren't in any kind of hurry to get back to them they decided to walk to the local poll hall to thier surprise it was a MIILE away!!
On our way back to meet the boys we stopped at Walmart to pick up a few things and while browsing through a few magazines we noticed a fabulous display of banana pudding on the cover of Southern Living so we decided we were going to make banana pudding! If you know Sam anything that is displayed pretty she is always going to make it whether it's a recipe or a craft and she will probably make it better!!Needless to say it was a very eventful fun night for us all....we didn't do much crafting but did lots of laughing!!
NUTTER BUTTER BANANA PUDDING
Ingredients:
1 Can of Eagle Brand Milk
1 Large Box of Instant Vanilla Pudding
2 Cups of Cold Milk1
Tub of Cool Whip
1 Box of Nutter Butters
5 Medium Bananas
Directions
Mix 1 can of Eagle Brand Milk, 1 Large Box of Instant Vanilla Pudding, and 2 Cups of Cold Milk. Beat until lumps are gone, then refridgerate for 30 mins to set and get thicker.Next fold in Cool Whip to pudding. Finally layer Nutter Butters, Cut Bananas, then pudding repeat to the top ending in Nutterer Butter
